The Belmar Mayor’s Wellness Campaign is committed to providing our community with basic information relating to health and safety. We also continue to promote well health and preventative health care throughout the year. Along these lines, the MWC Committee decided to post nutritious, inexpensive, easy-to-prepare recipes on the Belmar Website. These recipes have been prepared and tested by the BMC committee. Rose’s Pasta Fagioli
(Pasta Fazool)
Prep time (approximate) -1/2 hour Cost-under $5
Ingredients:
1 diced garlic clove
3 tablespoons of cooking oil
3 8oz cans of prepared tomato sauce
1 15 oz can of cannelloni beans
1 cup of cooked elbow macaroni
1 teaspoon parmesan cheese
Directions:
Saute garlic in oil until shiny (not brown). Drain off the oil. Add cans of tomato sauce and simmer for 5 minutes. Drain and rinse beans, then add beans to the sauce. Simmer on low for 10 minutes. Stir regularly. Cook macaroni according to directions on the box (don’t overcook!). Drain macaroni and add to bean and sauce mixture. Cook all together on low for 5 minutes, stirring occasionally. Add teaspoon of parmesan cheese before serving (optional). Enjoy!

Christine’s Collard Soup
Ingredients:
6 cups of water
1 large onion
4 cloves garlic
1 bunch of fresh collard greens
1 large potato and/or 1 16 oz. can of chick peas (garbanzo beans)
1 16 oz. can of diced or stewed tomatoes
Directions:
In large soup pot or crock pot add water, chopped onion and garlic. Clean collards in cold water and individually fold each collard leaf, cutting out the vein down the middle. Chop and add to pot. Add potato (with or without skin), chick peas (optional) and tomatoes. Add pepper, sea salt, and favorite soup seasonings to taste. Let cook several hours and enjoy!
Collards greens are extremely nutritious and outrank broccoli and spinach in nutritional value. They are low in calories, high in fiber, and rich in beta carotene, Vitamin C, calcium, and B vitamins.
The recipe will probably take 1/2 hour to 45 minutes to prepare, would cost under $10, and would feed four people.
